It is a very delicious cake and it can be a unique treat to your family and friends at the weekend. Don't get frustrated if Napoleon doesn't come out for the first time. You need to have patience and some cooking skills to make it.
Ingredients for the dough:
- Wheat flour - 1 kg
- Butter - 500g
- Salt - 1 tsp.
- Cold water - 250 ml
Ingredients for the cream:
- Flour - 125g
- Sugar - 3 / 4 cup
- Starch - 1 tbsp
- Eggs (yolks) - 6 pieces.
- Milk - 3 cups
- Vanilla sugar - 1 tsp.
- Whipped cream - 1 cup
First, prepare sweet, flaky pastry: sift the flour and mix it with salt, put 2 tablespoons of the softened butter and knead the dough adding cold water until the dough is rolled up into a ball.
Knead the dough another 5 minutes. Then spread it on the floured board, roll it into a rectangle with thickness of 0.6 inch. Put the butter in the middle. The butter should be cold and in the form of a square of 0.6 inch thickness. Bend the edges of the dough to the middle, so that they cover the butter.
Put the dough in the refrigerator for 20 minutes. Then again, roll out the dough (along away from you) trying not to squeeze the butter out and fold it in three. Turn the rectangle and roll out it again (along away from you), again fold it in three and put it in the fridge for 20 minutes. In such a way roll out and cool the dough 2 more times.
Ready dough is divided into three parts and rolled into thick layers of 0.2-0.3 inches, pricked and baked on the pan in a very hot (up to 446 - 482 °F) oven for 10 minutes. Then the temperature is reduced to 374 - 392 °F until the biscuits are browned.
Cooled biscuits are covered with custard or whipped cream.
Custard is prepared in several ways. Here is one of them: mix flour, sugar and starch, add the yolks and mix all carefully. Pour hot milk slowly continuously stirring the mixture in order to avoid lumps forming. Cook on low heat until it dense. Add vanilla sugar and cool down. Optionally you can add whipped cream.
Ready cake sprinkled with powdered sugar, cut into pieces and served up.
